Principle of Assay
This kit provides a convenient tool for detection of tannase activity. The principle is to use propyl gallate as the substrate for the enzymatic reaction of tanninase. Propyl gallate has a characteristic absorption peak at 270 nm. The change in absorbance at 270 nm before and after the reaction allows calculation of the tannase activity in the sample.
